Scott and I made this a few weeks ago for the top of shepherd’s pie (didn’t get a pic of that, unfortunately). It was so good, I decided to make it again for dinner tonight. It made quite the yummy dinner – though probably not the healthiest. But, I must say, it’s better than the night I ate an entire box of the boxed Betty Crocker potatoes. (Don’t judge.)
Mashed potato skins
Red potatoes (I used probably 2 lbs. and didn’t peel them)
milk & butter to taste
1/2 cup shredded cheese
bacon, cooked & chopped (I used a few pieces per serving)
green onions, chopped (I used one per serving)
salt & pepper to taste
1. Cut potatoes into pieces and boil until fork tender (about 15 minutes).
2. Drain potatoes and return to pot. Add butter & milk to taste and mash with potato masher.
3. Add cheese, salt and pepper and mix together.
4. You can either add all the fixings together or you can let everyone add what they want to their own bowls.
