This was a great, easy dinner. Scott and I had gone out for the afternoon to do a little bit of shopping and got stuck in traffic because snow and ice. So this was perfect because it was ready in less than 45 minutes. The laughing cow chicken is great and I can’t wait to try it with some other flavors of the cheese.
Laughing cow chicken

Risotto with peas (Recipe as is serves 8, I cut in half)

1 medium sweet onion, finely chopped
1 clove garlic, minced
1 tablespoon olive oil
1 1/2 cups arborio rice
3 1/3 cups chicken broth
1 1/2 cups frozen peas
1/2 cup grated parmigiano-reggiano cheese
3 tablespoons dry white wine (I omitted)
salt and pepper
1. Heat oil in a 3-1/2 quart sauté pan over medium heat. Add onion and garlic. Cook, stirring often, until onion is soft but not browned, about 4- 5 minutes.
2. Add rice. Cook, stirring, until grains look opaque, about 2- 3 minutes. Add broth about a quarter cup at a time and stir until liquid is absorbed. Then add another quarter cup of broth. Repeat until all liquid is used. Add peas in with the last quarter cup of broth.
3. Remove from heat and add cheese. Stir to combine. Serve warm, with additional grated cheese to top if desired.
