I was dumb and bought some bananas at Sam’s club the other day and now they’re all bad. 😦 That’s in addition to the three I had going bad on my counter before I bought more. (silly me.) So, I’m in the market for some banana recipes.
With the first three that were going bad, I made banana bars. I got this recipe from my aunt and also saw it on recipezaar.com the other day. They were VERY easy to make. I put mine in a 9×13 pan and it turned out more like a cake (bake for a little longer) and I didn’t frost them since I thought they were great without the frosting.
Banana bars (makes about 36 bars)
1/2 cup butter, softened
2 cups sugar
1 1/2 cups ripe smashed bananas (about 3)
1 tsp vanilla
2 cups flour (I used 1 cup all-purpose & 1 cup whole wheat)
1 tsp. baking soda
pinch of salt
Cream butter & sugar.
Add eggs, bananas & vanilla. Blend well.
Add combined flour, baking soda and salt. Mix well.
Pour into greased 15×10 pan and bake at 350 for 25 minutes or until done.
1/2 cup butter
8 oz cream cheese, softened
4 cups powdered sugar
2 tsp. lemon extract or vanilla
Cream together butter & cream cheese.
Add sugar & flavoring of choice.
Spread over cooled bars.
