In an attempt to eat healthier and not spend as much money eating out, I’ve started to pull together a menu for the week. This helps me plan dinner for myself when I work and since I’m heading into a 7-day stretch, it’ll make it a little more difficult to justify stopping at BK.
This meant pouring over cookbooks, recipes and websites to figure out what to make that would be quick and easy and somewhat healthy. Then there was the trip to the grocery store(s) – yes, two, plus Sam’s – to pick up items. Thankfully we were able to stick to the list and didn’t pick up packages of doughnuts or potato chips.
Here’s what the kitchen looks like when I plan meals … I know, I’m weird.
So, what’s on the menu? Have a look:
Bruschetta chicken – I’m using the “south of the border style”
I’ll be whipping up some desserts to take to a friend’s house for dinner. Gotta love potluck nights.
Swedish meatballs – I”m using frozen meatballs and just whipping up the sauce.
