I made these muffins to take to my friend Laura’s house for breakfast before our Breast Cancer Awareness walk. I almost didn’t want to share – these muffins are THAT good. Really. They might even rival apple cider doughnuts. (GASP! Did I just say that?!?)
These were super moist and extremely delicious. Plus, they’re from Eatingwell.com, so they’re on the ‘healthier’ side. I can’t impress on you how good these are. Mmmm.

Streusel:
2 tbsp. packed light brown sugar
4 tsp. whole wheat flour
1/2 tsp. cinnamon
1 tbsp butter, cut into small pieces
Muffins:
1 cup whole wheat flour
1 cup white flour
1 1/2 tsp. baking powder
1/2 tsp baking soda
1/4 tsp. salt
1 tbsp. ground cinnamon
1/2 tsp. ground nutmeg
1 egg
1/3 cup packed light brown sugar
1/2 cup apple butter
1/3 cup maple syrup
1/3 cup apple cider
1/3 cup low-fat plain yogurt
1/4 cup canola oil
Preheat oven to 400. Coat 12 muffin cups with cooking spray. (I actually got about 16 muffins)
Prepare streusel: Mix brown sugar, whole wheat flour, and cinnamon in small bowl. Cut in butter with pastry blender or your fingers until mixture resembles coarse crumbs. Set aside.
Prepare muffins: Whisk flours, baking powder, baking soda, salt, cinnamon and nutmeg in large bowl.
Whisk together egg and brown sugar in medium bowl until smooth. Whisk in apple butter, syrup, cider, yogurt and oil. Add wet ingredients to dry ingredients and stir with rubber spatula until just combined. Scoop batter into muffin cups and sprinkle with streusel.
Bake until golden brown and tops spring back when touched lightly, 15-25 minutes. Let cool in pan for 5 minutes, then cool on wire rack before serving.
Per muffin (based on 12): 209 calories; 7 g fat (1 g sat, 3 g mono); 21 mg cholesterol; 34 g carbohydrates; 4 g protein; 2 g fiber; 162 mg sodium; 40 mg potassium.

I like the combination of ingredients you have here. Some are the flavors I love. I want to try to make this gluten free.
Oh these look yummy! I just stumbled across your blog and you have so many delicious things going on here! We have a black cat named Minnie (after the old song Minnie the Moocher). She worked her way into her name because she likes to help me cook… and taste recipes. She’s been known to eat a hot pepper and loves olives… LOL Black cats are the sweetest, aren’t they!?
